If you truly do have the receipt showing the cancellation of the contract, and it is from a fax machine showing the number dialed, number sent from and date and time - that is a legally binding and enforceable document.
You should invest a few dollars in speaking with a lawyer who knows time share law, and see if you can't force them to honor the cancellation of the contract.
